I was told it was the traditional meat for tacos. I agree with your description, but unlike you, I did not care for it. I know that it is typical for many countries to use every part of the animal, both out of poverty and respect...but, I am just not hungry enough to eat cheek, bladders, brains, etc. (maybe a hock now and then...)
