Breakfast Casserole for Two

Happy Independence Day!
Did you celebrate by grilling out?
Did you have hot dogs?
Maybe you had Spiral Dogs like we did.

Whether it's buns or bread, chances are good you have some bread laying around the house.
I'm a big one for making use of what you have.

(You might recall the Cornbread Baked French Toast 
we made from leftover cornbread and fruit muffins.)



One reason I love the holidays is because my sis makes a great one every time!  
It's funny.  
She tried to get her girls to give it a pretty name. 

Egg souffle. 
Breakfast strata.  

There were many suggestions.

Know what stuck?
Egg thing.
As in..."Mom, do you need help making the Egg Thing?"

 I still call it that. 
It makes me smile.


This morning, I made a breakfast casserole for just the two of us. For the mini version I took a half loaf of leftover french bread - the more stale the better.  I preheated the oven to 350F. Cut into inch wide pieces, it was enough to cover the bottom of a buttered loaf pan.  I scrambled up 4 eggs, added about 1/2 c. cream, 1/4 t. salt, 1/4 t. onion powder, and some Penzey's dried shallots.

Set the beaten mixture aside.  I grabbed some leftover ham and tore it in pieces and placed it on the bread. Then I gave a good sprinkling of shredded cheddar on the ham. Last, I poured the egg mixture on top and baked it for about 30 minutes - until the egg was set. The loaf pan made 4 pieces.

Honestly, it's SO much better if the bread is really stale AND if you make it the night before. This allows the egg to really incorporate into the bread. I didn't.  But, it still rocked.  My husband and I were treated to a hot eggy breakfast filled with love.  And, it made us smile.
