Okay, so this blog isn't exactly VEGAN friendly.
That's caul fat up there.

The beautiful slideshow pics above were taken by the gentleman's 14 year old daughter. (I'm just going to assume he's taken.)

Still, I really find the fact that he just tosses a portion of piggy up on the butcher block, grabs a bottle of wine, (it's in the pics), and goes to town with a hack saw...amazing.

To me, the "ability to butcher a hog" isn't exactly a "Must-Have,"
But, it's more appreciated than a box of Godiva chocolates.

Just saying.
Oh, and the guy's Flickr photostream is very nice.
