Well, this time I went in for a 6 hour shift, instead of 2 - lots of work to be done being Easter and all. Rinsed and seasoned about 9000 pounds of chicken...ok, about 2 commercial racks top to bottom - you can do the math.
Saw some of the biggest slabs of beef I've ever seen, actually about 15 of them.
Gorgeous sides of meat.
Can meat be gorgeous?
I'm gonna go with yeah.
I was dying to feel what it's like to cut it into steaks, but I was on chicken duty.
I can deal. :)
There'll be more beef another day.
