Kentucky Corn Pudding - with recipe

If any of you remember my post from last year where I experienced my first fried green tomatoes, you might also remember my first corn pudding. (I took a really bad picture of it - shown below.) Still, the taste was amazing.So, I thought I would try to replicate it. It was a bit like a custard, a tad soufflé. I tried this Beaumont's Inn's Famous Corn Pudding Recipe and it was 95% of what I remembered. I'm sure it's no coincidence that the Beaumont Inn is in Kentucky.

(Oh, and I added some nutmeg.)

Kentucky Corn Pudding - from the Beaumont Inn

2 cups white whole kernel corn, or fresh corn cut off the cob
4 eggs
8 level tablespoons flour
1 quart milk
4 rounded teaspoons sugar
4 tablespoons butter, melted
1 teaspoon salt
(I added 1/8 t. nutmeg)

In a large bowl, stir the flour, salt, nutmeg, sugar and butter into the corn. In a separate large bowl, beat the eggs well and add the milk. Add the egg/milk mixture to the corn mixture and stir. Pour into a Pyrex dish. Bake at 450 for about 40-45 minutes.

Important:
Stir vigorously with a long fork three times (approximately 10 minutes apart) while baking - disturbing the top as little as possible.

Sadly, my camera focused on the gryos burger in the back, but you can at least get a feel for my finished product.

It was very good. Custardy, sweet corny goodness.

Do I need a 14-piece set of All-Clad (and all the other stuff mentioned above)?
Course not!
(Honestly, who needs a 10" fry pan...and a 12" fry pan...and a 3 quart saute pan?
And, if you have a 3 quart sauce pan with lid...do you really need a 2 quart, too?)

Still, I could make good use of a few of those pieces.
And, the rest would make lovely Christmas gifts.

I figure if Oprah can have a list, I can, too.
So, here are 10 kitchen items things that I truly love.

Dawn Direct Foam
I truly love this stuff. It's not a traditional dish soap that you pour into water to produce bubbles. Instead you squeeze it onto a damp (but not sopping wet sponge) and scrub your wet dishes. It's dissolves grease like magic and gets the orange stains out of your plastic ware! The less water you use the better. And, one soapy sponge will clean lots of dishes. Then simply rinse everything off. Be sure to get all the foam off.

It's a whole way of doing dishes. And, it's really worth the try. Just do NOT think use it like regular dish soap. It's not the same. It's BETTER!
Leifheit Pro Line Stainless Steel Cherry/Olive Pitter
I pit a lot of olives and this is a lifesaver. I can pit a pound of Kalamatas in no time flat. It can supposedly be used for cherries, too, but I haven't tried that. Now, I will offer a disclaimer that folks have reported that the pin falls out. (Maybe the small cherry pit makes the pit hit off-center?)

I can absolutely say that I have pitted more than my fair share of large pitted Kalamata olives and my pitter is in perfect shape. (Oh, and the pitter comes with a little plastic "closer" that keeps the pitter, well...closed. Perhaps the pin can get damaged by leaving the pitter rolling around in their drawers?) I swear by my olive pitter.
Citrus Squeezer
I bought some generic yellow one from Linens and Things and I love it. But, if I had to buy one again, I would prolly try this Norpro Stainless Steel Press. One quick squeeze and your done. (You place the citrus half in upside down. Then when you squeeze, it turns the flesh and rind inside out.) Whether it's orange juice for cookies or lime juice for mojitos, my citrus squeezer gets a lot of use. (I first saw one on chef Rick Bayless' TV show. Thanks, Rick!)
Microplane Stainless Steel Zester
From orange, lemon, and lime zest to nutmeg, and chocolate, this little zester is a handy-dandy multi-tasker. While you *could* buy a microplane with a handle, this model is my favorite.

Why?
Bbecause if you are grating, say nutmeg, and you want to measure it, simply slip the plastic cover on backwards. The filings will fall into the plastic sleeve. Then you can just slide them into your measuring spoon. Granted, I don't often get the urge to measure my nutmeg, but I like the ability to do it if the mood strikes. *wink*
Half-sheet pan
At the suggestion of Alton Brown, I bought my first half-sheet pans at my local commercial kitchen supply store. They were 5 bucks each. Three years later they are still going strong. Love 'em. I can bake up a whole pound of bacon to a perfect crispness on these. Yum.

Half-sheet grate
This grate, obviously, goes with the pans. Perfect pairing.
Digital instant-read thermometer (waterproof)
This isn't the exact model I have, but you get the idea. (I wish mine were waterproof.) If you don't already have one, get yourself a nice digital thermometer with large numbers. This one doesn't stay in the oven - it's more for temp'ing on the fly - like a nice pork tenderloin on the grill. Open the lid, temp it, pull the pork, let it rest, indulge...

Again, not exactly my model. But, my model is currently $99 on Amazon. (And, no I didn't pay that. I paid about $25.) This type of thermometer stays in the oven - well, at least the probe end does. You set the temp you want, like 151 for a turkey, and then the thermometer will beep when the temp has been reached. (No, you won't eat the turkey at 151, but carry-over should take it to 165.) There is also a timer and a nice long cord that extends out of the oven and (hopefully) on the back it has a magnet, so you can just *stick* it on the oven while you wait for the turkey to come up to temp. It's a true "Set it and forget it" Ha! :)
Silpat (11-5/8 by 16-1/2 inch)
From cookies, to brittle - I use this almost daily. Forget foil or parchment paper - or those expensive "thermal" cooking sheets. I never made a cookie that tasted good until I used my Silpat. (There's also a knock off brand that works well, too.)
Kitchen Grips oven mitts (Extra long)
These mitts rock. If you've ever pulled a pan with juice to the rim out of the oven, you've wished for longer mitts. These are safe to 500 the company says. (Actually, I found they tend to track/melt the red color onto my pans at about 475.) Even at 475 I can't feel a bit of heat through the glove. They are absolutely wonderful.

Foodie Music and a Question for my Readers

Hey there loyal readership of...10
Yep. I'm gonna bump up my expectations.
(It's good to have goals.)

I added a music playlist to the blog, which hopefully is easy to locate off there to the right.

Lengthy aside...
(I really wanted to add Louis Jordan's version of "Hungry Man" but it wasn't an option. Instead, I chose "Saturday Night Fish Fy."

I think "Hungry Man" is a fantastic song and you can hear the full version if you head to the Food Fight Documentary Film site. Or, you can listen to a preview and buy it from Amazon.

I love "Hungry Man."
It's a laff riot.
Who knew there was a rhyme to Tucumcari??

Not For Sensitive Viewers



These videos are not for the feint of heart.
But, they are not overly gruesome, either.
Rather, they are a methodical look at poultry - from the egg to the plate.

"Jamie's Fowl Dinners" blends a formal dinner in a Gordon Ramsay-style dining room with a helping of Alton Brown insightful interviews and factory walk-throughs focusing on the realities of slaughterhouse procedures. And, then there's a dinner.

Chef Chris Costentino's blog "Offal Good" recently highlighted Jamie Oliver's BBC TV special Jamie's Fowl Dinners.

In his blog, Cosentino wrote:
What can I say but Jamie has got a set of brass ones for doing this, and I think its great more power to him for sticking it to the big food companies who want to treat animals like s***. Battery chickens what a f****d up process, what ever happened to coq a vin, now we know you cant get roosters cause they kill them at birth because they don’t produce eggs. I know this is a bit old but I am proud to show this and stand by Jamie and his efforts. Please take the time to watch theses videos there are graphic but very educational. Not only does Jamie slaughter chickens in front of the dinners he shows them the horrors of factory farmed chicken and eggs. Don't be offended remember this was a show on the BBC all over the UK.

It's un-be-lievable.
I feel much more knowledgeable about the practices. And, not in a yellow journalism can't trace the facts sort of way. Here both the full circle of both the chicken and the egg are each chronicled in a clinical, step-by-step process.

I am a more educated consumer for having watched this.
I highly recommend watching these videos.

Okay, so this blog isn't exactly VEGAN friendly.
That's caul fat up there.
Pretty ain't it?

The beautiful slideshow pics above were taken by the gentleman's 14 year old daughter. (I'm just going to assume he's taken.)

Still, I really find the fact that he just tosses a portion of piggy up on the butcher block, grabs a bottle of wine, (it's in the pics), and goes to town with a hack saw...amazing.

To me, the "ability to butcher a hog" isn't exactly a "Must-Have,"
But, it's more appreciated than a box of Godiva chocolates.

Just saying.
Oh, and the guy's Flickr photostream is very nice.

Family hustles to sell enough mint oil to save farm business

Jim Crosby's voice chokes with emotion when he talks about the oldest mint farm in the country, a 140-acre patch of fragrant green about 15 miles north of Lansing that's been in Crosby's family for four generations.

He and his sister Linette Crosby, who co-owns the property in St. Johns, are desperately trying to sell 70,000 bottles of farm-distilled peppermint and spearmint oil by Saturday.

If they don't raise $348,000 by then, their lender has the right to confiscate the oil and their farm equipment, effectively ending the family business.

"That oil is our hope," Jim Crosby said Wednesday. "In each bottle is all my hope, my dreams and my prayers."

A month ago, the duo sent an e-mail to about 1,000 former customers, telling them of the situation and asking them to buy oil and forward the message.

More than 7,000 orders have poured into the farm's Web site, www.getmint.com. High traffic has slowed the site at times.

Crosby is fervently hoping that potential buyers will have patience -- and that his bank, Greenstone Farm Credit of Lansing, will have mercy, extending the deadline for raising the money.

Jim Schiller, Greenstone's chief executive officer, said Wednesday that his company has no plans to show up at the farm on Saturday, saying, "These things take a few days."

If Greenstone has to confiscate farm equipment, Schiller said, "It's terrible. ... It hurts us."

Jim Crosby said that his financial troubles began in 2005 when his father died. A few months later, Jim Crosby's uncle, who farmed an adjacent parcel of 140 acres, suffered a stroke while harvesting.

Jim Crosby, 42, was left alone to run his farm and his uncle's. His sister, 48, moved back to the family home to help.

Now the pair are doing everything they can to save the farm that their great-grandfather founded in 1912. They still have some fields planted 80 years ago by their grandfather.

Ephraim Smith, a retired California State University-Fresno history professor, confirmed Wednesday that the mint still on the Crosby farm is the oldest in the country. The farm is likely the oldest continuously operating mint farm in the country as well, according to Smith, who produced a documentary on America's mint farmers.

"In the 1920s and '30s, one-third of all the world's mint oil came from that part of Michigan," he said.

The Crosby family and volunteers plan to spend Friday at the farm, preparing Internet orders for shipping and selling from the farm store at 1250 East Parks Road.

On Saturday, Jim Crosby plans to sell his oils at the Lansing farmer's market.

Lee Purdy, who uses Crosby's mint oil to cure headaches and sells farm-baked bread at a nearby booth, said all the farmers at the market are pulling for the Crosby family.

"They fully intend to pay their debt," Purdy, 49, of Argentine said Wednesday. "They're just looking for a little more time. Well, there's a whole nation of people in that frame of mind."
